Recipe 1: Pear Pie

Ingredients:

  • 6-8 ripe pears, peeled, cored, and thinly sliced

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 2 tablespoons all-purpose flour

    • Pearl sugar (for topping, optional)

    Instructions:

    1. Activate the Yeast:

      • In a small bowl, combine the warm milk and granulated sugar. Sprinkle the active dry yeast over the mixture and let it sit for about 5-10 minutes until frothy.

    2. Mix the Dough:

      • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture, melted butter, and beaten eggs.

      • Using a wooden spoon or dough hook attachment on a stand mixer, mix the ingredients until a shaggy dough forms.

      • If using raisins, gently knead them into the dough until evenly distributed.

    3. Knead the Dough:

      • Turn the dough out onto a lightly floured surface and knead it for about 8-10 minutes until smooth and elastic. Alternatively, you can use a stand mixer fitted with a dough hook for this step.

    4. First Rise:

      • Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free place for about 1-1.5 hours or until doubled in size.

    5. Shape the Loaf:

      • Once the dough has risen, punch it down to release the air bubbles. Divide the dough into two equal portions and shape each portion into a round loaf.
